Breakfast at the office is always a tough choice, especially as the weather starts getting warmer. During the winter months a few minutes in the microwave and you’ve got a nice bowl of oatmeal to take the winter chill off. In the warmer months, I like to go with something cooler in the morning.
Today I whipped up a strawberry and yogurt breakfast parfait to get my metabolism going, but also provide protein to keep my sugar levels even until lunchtime. Plus, strawberries are such a great source of Vitamin C and antioxidants. Even better, they are in season! That means they are generally cheaper. Buying fruits and veggies that are in season is one way to eat healthy and keep costs down.
So here goes with today’s recipe! It’s tasty, nutritious and only has about 210 calories!
Strawberry and Yogurt Breakfast Parfait
1 serving Dannon Light /n Fit Yogurt (either strawberry or vanilla or really mix it up with blueberry or cherry!)
1/4 cup Grape Nuts Fit Vanilla and Cranberry Cereal
1 cup sliced strawberries
Put half the berries in a bowl/glass. Top with 1/2 the yogurt and 1/8 cup cereal. Repeat with the remaining ingredients!
